Today is National Peanut Butter Day.
Nut butters in general are excellent sources of protein and brain-friendly fats. I usually take a few Justin’s packets with me on flights just in case I’m delayed in an airport or on the tarmac.
I’ve also created a nutritious and delicious toast topping that I keep in the refrigerator at all times. I make it in small batches, storing it in a plastic, half-cup-sized container so that it stays fresh and in it’s highest nutrient form.
Here’s my recipe, which you can tailor to your own preferences:
1/3 cup smooth peanut butter
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 tablespoon ground flaxseed
When spread on Ezekiel toast, it makes a nutritionally-dense, vegan breakfast or a quick after school snack. Pair it with fresh fruit like apples or bananas for even more of a healthy treat.
When I moved to Chicago, I gradually changed my diet to a plant based one for a myriad of reasons:
• Plant based diets are helpful in halting or reversing climate change
• As a founder, it was WAY better for my budget
• It appeals to my furry friend sensibilities
• As a voluntarily car-free city dweller, carrying meat on bikes & public transportation grossed me out
